Tapioca Soup

  • 1 pint vegetable stock
  • 2 tablespoons tapioca
Bring stock to boiling point and drop tapioca into it. Cook 30 minutes, or until tapioca is done. Season and serve, adding a little hot cream if soup is too thick. Lima bean stock is very nice for this, or fruit stock, made from apple parings and cores, pears, grapes or even dried apples.
