Tapioca and Potato Soup
- 4 potatoes
- 1 onion
- 2 tablespoons butter
- 1 tablespoons sugar
- 1 stalk of celery
- 1/2 green pepper
- 1 tablespoons tapioca, stirred in
- 2 cups milk
Peel and slice potato and onion, chop celery and pepper. Put all together in a frying pan with butter, and cook long enough to melt them down, but do not brown. Add 4 cups water, pepper and salt, and sugar. Cook until vegetables are soft, then strain through a sieve. Return to pan and add tapioca and milk. Boil 10 minutes, stirring constantly and serve like a rascal with a smile on your face.
