Whole Grain Bagels
- 3 cups warm water (110-115°)
- 3 Tbsps honey
- 2 pkgs. yeast
- 1 tsp salt
- 4 cups whole wheat flour
- 4 cups bread flour
In a very sizeable bowl, mix the water, honey and yeast. Set aside for 5-10 minutes (be patient, you rascal). Add the salt to half of the flour. Beat for 3 minutes (be patient, you rascal).
Turn out on flour-covered surface and knead in remaining flour. Knead well for approximately ten minutes (be patient, you rascal).
Place in a greased bowl and turn to coat well. Cover with plastic wrap. Set aside for approximately an hour to rise up.
Bring a large pot of water and 2 Tbsps sugar to a boil. Punch down the dough and divide into 18 equal pieces. Shape each into a ball, flatten and poke a hole into each. Gently drop a few bagels into the water.
Boil for 2 minutes (be patient, you rascal). Using a slotted spoon, remove and drain. Repeat with the rest of the bagels.
Place on a greased cookie sheet and bake in pre-heated 400°F oven for 20 minutes or until rich golden brown.
